We love Meinklang! They are a fully operational biodynamic farm in Burgenland that produces vegetables, fruit, beer, meat, and, of course, wine. The pinot gris used for this Pet Nat spend 14 days on the skins, which results in a complexly textured sparkling wine that gets additional creaminess from the time spent on the lees. The fresh brightness that shows itself through flavors of white peach, golden apple, and cantaloupe dances across the palate leading to an almost savory finish of olives, white pepper and aged cheeses. This is one of our favorite wines from one of our favorite producers.
